Quick question. I make my own Buckboard Bacon. I trim the bones from the pork shoulder and I have issues getting the bones out without cutting away too much meat. Would this knife be the best boning knife to help me with that? I love the videos and thanks for all the feed back y'all give!
I hate to call you out brother but carbon and stainless steel are two completely difgerent types of Steel. carbon will rust, stainless is highly stain-resistant.

Wusthof makes the best knives and the Aussie distributors are awesome. I had two wusthof knives that after years of commercial kitchen abuse held up brilliantly! I had the handles crack then chip apart because the kitchenhand put them through the dishwasher! They replaced the old knives no questions asked!
Best knives you can buy. Keeps an edge way longer then many other brands. For the home cook it'll last decades with a bit of love.
I have a Gerber Balance Plus 6' boning knife and others knives that I got back around 1990. Made in the USA.(they stopped making them, not sure what year and why).
