I pick up 2 or 3 roadkill deer a year in Michigan. There's enough you can always find one still warm. DON'T gut a roadkill! Slice the hide down the spine and peel it down. Slice off the backstrap/s and quarter/s that aren't bruised (1 sides usually bad) and then bone the meat out into your preferred cuts and wrap.

Got my hands on some deer meat from my grandfather. Thought it was a roast so I had bought everything to smoke it low and slow. Turns out. It's just a bunch of strips and chunks. Guess I'm doing stew.
