    great use of a cut that gets little respect for what it is, but i feel like you sold us a bit short just using the dried seasoning. making a garlic rosemary paste to compliment the herbs you've got in the blend provides a great backbone for the flavor profile… the play on fresh vs dried really amps up the final result as they start to release their natural oils and combine with the rendered beef fat. if you can either make your own or get your hands on it, a dusting of dried porcini powder really takes this right to the edge of maximizing richness.

    it's a shame that the liquid was wasted and not used to dress the pasta, as would be the true italian style you're rolling into this preparation. so much time and effort is put into the showpiece, and yet it's just served over precooked noodles and blistered tomatoes. finish all of that in the same pan with a little braising liquid, pasta water, and some pecorino romano and you might as well get "festina lente" tattooed on your forearm.

    all unnecessary criticism aside, another great video bringing variety to the world of smoking. keep it up!

    I LOVE seeing videos that aren’t ? perfect. Most of youtube is full of edited perfection vids. Seeing the membrane not work perfect, or the suggestion you might have wanted a bit longer on the second part of the cook makes me appreciate this channel more! Well done ?? Reality of cooking!

    Chef Britt is the best! Love hearing a different voice on this channel. Even though some of the best tips have come from Chef Tom. He's amazing for sure, but love the mix up in talent. Keep it going

    Could do a video of BBQ rescues? Like when the parchment on ribs won't peel off or when different things go wrong and how you can rescue them or change them into different dishes.
