Nuthin' worse than overworking your meat, Boy! Gotta say that your balls do look mighty good, though… LOL
I am, however, currently having issues with ground turkey, on a scale even worse than my boycotting of $4 / lb chicken wings. I bought a pound of ground turkey not long ago, made tacos, and it was impressively good. Until I noticed what I'd paid for it. The frickin' stuff was 10¢ / lb higher than 90/10 ground sirloin!! No schteenkin' way! Seems that everything that gets "trendy" with the yuppie crowd goes sky high, in this case forcing me to eat unhealthy ground sirlion instead. LOL

Larry, this recipe is somewhat different from the way I learned to make meatballs. But I have to hand it you, the turkey meatballs looked perfectly juice and popping with flavor! OK, so you didn't use parmesan, but the addition of granulated onion, cayenne and chile powder give it a whole new wonderful dimension! Thanks for sharing this great recipe!
Using minced onion is a great idea. That would keep the meatballs from falling apart.

question Wolfe, why not cook the meatballs in a large pot, then pour the sauce over them? that way you get the bits of flavor from the meatballs into the sauce

I swear if you do it right, turkey can taste just as good as beef if not better. I make a killer turkey burger that's moist and delicious. No cheese needed.
