This is a great idea for those who don't need to cook a whole butt at once. You can split that butt into a couple meals. My household is small and 8 lbs of pork is way too much. Looks delicious! Gotta give it a go

Might as well just smoke and then sous vide with this method and save yourself a shit load of work for similar results.
