We trimmed up a 17 pound Creekstone Farms Prime packer and did a quick step by step of the brisket prep and cooking with stop motion. This shows the brisket as it cooks for the first 6 hours on our Yoder Smokers YS640 Pellet Cooker up until we wrapped it at the stall to finish. The slices were just a tad overcooked at the edges, but the flat was moist and tender throughout. Delicious.
