In this Pit Barrel Cooker Smoked Ribs Recipe, we will teach you how to Smoke baby back ribs in the Pit barrel Cooker or another Barrel Style Smoker. This Easy Baby Back Ribs Recipe is one that is simple to do and tastes great! We made these on the Pit Barrel Cooker, but you can also do this on any other type of grill using the indirect cooking method. Everything you need to know is below.

INGREDIENTS THAT YOU WILL NEED FOR THIS COOK:

2 Racks of Back Ribs
Olive Oil
BBQ Rub
BBQ Sauce

***HOW TO MAKE THIS EASY COUNTRY STYLE RIBS RECIPE***

Step #1
First you are going to prep your Back ribs by applying a layer of oil on both sides. This will be a binding agent for when you apply your BBQ Rub. Next apply your favourite BBQ Rub all over with a nice liberal coating. This is going to be the foundation layer of flavour. Once this is done go ahead and place them into the fridge for a couple of hours.

Step #2
After your ribs are prepped, start getting your grill set up for cooking at 275-300 degrees. If you are using the pit barrel cooker follow the lighting instructions here – https://youtu.be/3WwHRfpjNr0
If you are using a kettle grill you will prepare your grill for indirect cooking.

When you grill is ready you will then place your hooks into the ribs between the 2/3 ribs and hang them into the barrel.

Step #3
Once the ribs are in the barrel you will let them hang there for 3.5 hours. After 3.5 hours of cooking at 275-300 degrees which is the average cook temp on the pit barrel you will then take them out and sauce all the ribs then get them back into the barrel and cook for an additional 45-60 minutes. you will know the ribs are done when the ribs begin to pull back from the bone and/or begin to pull away.

Step #4
Once your ribs are done pull them out of the barrel and let them rest for about 10 minutes, slice them up and begin to feast!

What you will need to make this BBQ Pork Tenderloin recipe:

2 Racks of Pork Back Ribs
Your Favourite ribs rub (we used our Southern Country Rub)

1 cup Apple Juice
2 tbs brown sugar
1/2 cup apple cider vinegar

Butter
Honey
Brown sugar
Chipotle powder
BBQ Sauce

***HOW TO MAKE THIS SMOKED BABY BACK RIBS RECIPE***

Step #1
First you are going to want to prepare the ribs by flipping them over meat side down so that you can remove the membrane that is on the back side. Use a butter knife to peel from the middle to each end or if you have some paper towel you can start and one end and gripping with the paper towel peal it off from end to end. Once this is done you are going to want to trim up any extra tabs of meat to make it look real nice. After your ribs are prepped you are going to place a liberal coating of some good rib rub on to all sides of the back ribs. When this is done you are going to let them sit for a minimum of 20 minutes up to 2 hours.

Step #2
Once your ribs are prepped and rubbed you are going to set up your grill for indirect cooking. You are going to want to also place a drip pan below where you are cooking the ribs and fill it up with some hot water to allow for some extra humidity while the ribs are cooking. Once your grill is set up for indirect cooking you are now ready to place the ribs on the grill and begin cooking at 250 degrees for 2 to 2.5 hours. But before you close the lid make sure to add in some hardwood so that the ribs get a real nice smokey flavour.

Step #3
Now that your ribs are cooking you are going to begin to prepare your mopping sauce. Combine your apple juice, apple cider vinegar and brown sugar together and allow the sugars to dissolve. We are going to place this mopping sauce on the ribs two times, first at 45 minutes and at 1.5 hours.

Step #4
When your ribs have a real nice mahogany color (between 2 to 2.5 hours of cooking) it is now time to take them off the grill and place them meat side down on foil. Feel free to add your favourite toppings/flavours into the pouch. We used butter, brown sugar and honey with some chipotle powder to give it a nice spice to balance the sweet.

Step 5
After 1.5 hours in the foil you can remove it from the pouch and place it back on the grill. You will then sauce it with some BBQ sauce and let it set by cooking it for an aditional 15-20 minutes.

Once all this has been done and the meat is starting to pull from the bones your ribs are done. Take them off the grill and let them rest for 5-7 minutes before your cut them up and begin to feast!

HOW TO SMOKE RIBS ON THE GRILL
______________________________________________________________

INGREDIENTS NEEDED:
– 2 racks of Baby Back Ribs
– BBQ Rub

SPRITZ
– 3 oz water
– 3 oz apple juice
– 1.5 oz whisky

WHISKY BBQ SAUCE
– 1 cup ketchup
– 1/3 cup brown sugar
– 1/3 cup apple cider vinegar
– ¼ cup molasses
– 1 tbs Yellow Mustard
– ½ tbs chili powder
– ½ tsp onion powder
– ½ tsp garlic powder
– ¼ tsp of smoke paprika
– 2-3 oz Shelter Point Whisky

METHOD:

Step #1
To Start off, spritz your ribs with as your base layer of flavor. This will also help bind your rub to the ribs. Next, apply your bbq rub to both sides of the ribs and let it sit while you get your grill set up for smoking at 250F.

Step #2
With your grill up to 250F, place the ribs opposite the coals and place on your whisky barrel staves or hardwood of your choice. Close the lid and begin cooking for around 2.5 hours while spritzing every 45 minutes.

Step #3
After your ribs have nice color, remove them from the grill and place them foil wrap with some butter, brown sugar, your whisky bbq sauce, and a generous amount of your spritz. Wrap everything up and place it back on the grill until tender and your desired of doneness. For us this was around 1.5 hours.

Step $4
After the ribs have been tenderized in the foil remove them from the foil and back on the grill. Glaze the ribs with your whisky bbq sauce and let them set for about 10 minutes before removing from the grill and enjoying your ribs.
