In this How to Thaw Turkey Fast Video, we will teach you how to Defrost a Turkey Quickly for you next Turkey dinner. Turkey defrosting method is real easy to do and only takes a few hours! It is best to defrost a turkey in the fridge, but when pressed for time this method can save you bacon… well turkey…. 😉

***HOW TO THAW A TURKEY IN WATER FAST***

Step #1
First you will need to take a large stock pot or container that can hold your turkey. You will then Place the turkey into the pot and cover with cold water. The water will cause the turkey to slowly thaw as it sits in the water.

Step #2
After 30 minutes you are going to need to dump out the cold water and replace it with fresh cold water. This is going to help keep your water cool as well as eliminate potential bacteria from building up in your water. REPLACE THE WATER EVERY 30 MINUTES UNTIL DONE.

Step #3
This method takes about 30 minutes per pound to defrost.

1QT Boiling water
5-6 QT Cold Water
5-7 cups of ice
1 Cup Kosher Salt
1 Cup Brown Sugar
1 lemon and it’s zest
1 orange and it’s zest
1 apple sliced
8 cloves of garlic
Sage
Rosemarie
Thyme

***HOW TO BRINE A TURKEY***

Step #1
First you need to mix up your Brine by taking all your ingredients including the zest from the lemon and orange and place them in a QT of boiling water. This is going to dissolve the the salt and sugar as well as blend together all the flavours.

Step #2
Once your concentrated brine is mixed, pour it into a large stock pot with 5 qt cold water. Next you will place your ice into the mixture and let it chill down to a safe tempreture. Once the brine has been chilled to a safe tempreture you will then place your turkey into the brine so it is fully underwater.

Step #3
Lastly you will place a lid on the pot and place the turkey into the fridge for 12-24 hours.

HOW TO GRILL LEMON GARLIC CHICKEN WITH CEDAR WOOD WRAPS
______________________________________________________________

INGREDIENTS NEEDED:

Chicken Breasts
Kosher Salt
Minced Garlic
Chopped Dill
Chopped Rosemary
Lemon Slices
Cedar Wood Wraps – https://amzn.to/2SdsWF8

METHOD:

Step #1
To Start off, place your wood wraps into a dish of water to allow them to soak for about 10 minutes. While the wraps are soaking prepare your ingredients by chopping your dill and rosemary, mincing the garlic and slicing a lemon. After the wood has been soaked begin to build your wrap using your prepped ingredients. Once it has been put together, fold up the wraps and tie them together.

Step #2
Once your Chicken is prepped, you will set up the grill for cooking indirect at around 400F. There is no need to add any additional wood for smoking as the wraps will give of a vibrant cedar flavor on it’s own. With the grill up to tempreture place the chicken onto the grill indirect, close the lid and let it cook until the internal tempreture reaches 165 degrees. This will be around 25 minutes depending on the size of the chicken.

Step #3
Once the chicken has reached 165 degrees, remove it from the grill and let it rest inside the cedar wrap for around 5 minutes. This will allow the flavor of the cedar wrap to continue to absorb into the chicken as it rests.

HOW TO CUT UP A WHOLE CHICKEN INTO PARTS
______________________________________________________________

METHOD:

Step #1
Cut between the leg quarters and breast making your cut closer to the leg to help keep more skin on the breast. Next press down the legs and fold them back a bit until you see the joints pop. Slice through the joints and remove the Leg Quarters. Next find the fat line and slice through it and the joing to get your thigh and drimstick portions

Step #2
Hold the wing up and feel for the joint of the wing and breast. Cut around and through the joint to remove your wing portions

Step #3
To remove the breast, slice down the side of the keel bone and along the wishbone. Continue down the rib cage until the breast portion has been removed. Repeat for the other side.

HOW TO MAKE A MAPLE HAM GLAZE
______________________________________________________________

– MAPLE GLAZE
– 1/2 cup maple syrup
– 1/2 cup brown sugar
– 1/8 apple juice
– pinch of cinnamon (don’t miss this… soo good).

METHOD:

Step #1
Measure out all the ingredients needed and add them to a sauce pan. Whisk all items together and let simmer for 1-2 minutes.

Step #2
After it has simmered for a minute or two, remove from the heat and let stand for a few minutes to cool before applying it directly to the Ham. Cover the ham fully. Any extra sauce you can drizzle over the Cut up ham as needed.

HOW TO MAKE SAUSAGE AND PEPPERS SLIDERS
______________________________________________________________

INGREDIENTS NEEDED:
– 1 coil of mild italian sausage
– 3 peppers (any color)
– 1 onion
– 2 cloves of garlic
– 1/2-1 full jalapeno
– Salt and pepper to taste
– Soft bagette
– Mozzarella cheese
– dijon mustard

METHOD:

Step #1
To Start off, uncoil the sausage and cut it in half. This will help give a better smoky flavour. Next place it onto the grill indrect and begin smoking at 225 for around 2 hours or until the sausage reaches an internal tempreture of 165F.

Step #2
Once your sausage is finished, slice up your peppers, onions and other ingredients and sautee them until they are soft with just a little bit of crunch. You don’t want to overcook the veggies.

Step #3
With the suasage smoked and the veggies sauteed, begin to build your long uncut sandwich. Apply dijon mustard, add in the sausage and peppers then sprinkle on your mozzarella cheese. Place the sandwich back onto the grill for a few minutes to let the cheese melt. Once it’s melted, pull it off the grill, slice it into sliders and begin to feast!

This Coleslaw Dressing Recipe is both Quick and Easy to make. This coleslaw recipe is our go to when we make pulled pork sandwiches, brisket, ribs, or anything really on the BBQ. This Coleslaw Recipe can adapted and used with pre mixed cabbage or home sliced cabbage. We hope you enjoy this Coleslaw recipe.

**Coleslaw Dressing Recipe Card**

1/2 cup Mayonnaise
1/4 Apple cider vinegar
2 tbs white sugar
1/4 tsp smoked paprika (or to taste)

First you will grab a small mixing bowl. You will proceed to add in all the ingredients and mix together until smooth. Once the Coleslaw Dressing has been mix well, let it sit for about 20 minutes. This will allow the sugars to dissolve avoiding a crunchy sugar tasting dressing.

Once the dressing has set, grab a mixing bowl and add your desired amount of coleslaw. Add dressing as needed until it is well coated. Mix well and enjoy.

***HOW TO LIGHT THE PIT BARREL COOKER***

Step #1
First you are going to remove the charcoal basket from the Pit Barrel and you are going to take your Briquettes and pour them into the basket until they become level with the edges. Pit Barrel Recommends Kingsford, but we have seen the same results with similar high quality Briquettes from other companies. So if you can’t find Kingsford brand then others will work.

Step #2
After your Basket is filled you are going to remove about 40 from the charcoal basket and place them in a small chimney starter (easier to use than a large one). After your coals have been separated, proceed to light the coals and let them heat up for around 15 minutes.

Step #3
After 15 minutes your coals should be mostly but not all hot. At this point dump the hot coals over the cold coals. You will then place the bars of the cooker into place and close the lid. It is important to close the lid right away so that the coals start to settle.

Step #4
After the coals have been placed in the barrel you can start cooking. for around 6 hours.

NOTE** If you are looking for a longer cook time just add more cold coals to the basket at the beginning.

NOTE** If you are looking for a shorter cook time just remove a few coals from the basket at the beginning.

HOW TO SMOKE A PORK LOIN
______________________________________________________________

INGREDIENTS NEEDED:
– 1 Pork Loin
– Kosher Salt (1/2 Tsp/lb)

Lemon Pepper Rub:
– 2.5 tbs Dried Lemon Zest
– 2 tbs Black Pepper
– 1/2 tbs Garlic Powder
– 1/2 tbs Onion Powder

METHOD:

Step #1
To Start off, apply the salt to the outside of the pork loin roast. Use 1/2 tsp per pound. If you are dry brining your pork loin place it in the fridge covered overnight. After the pork loin roast has been salted, apply your Lemon Pepper BBQ rub to the entire outside of the pork loin. With the simple prep done, get your grill set up for cooking indirect at 325F.

Step #2
With the Grill up to temperature and your wood smoking clean, place the pork loin onto the grill and begin cooking. It’s important to use a good digital meat thermometer to monitor the internal temperature of the pork loin as it cooks. Halfway through the cook when your pork loin reaches 100F open up the grill and rotate the pork loin to promote even cooking. Close the lid and continue cooking until it reaches an internal temperature between 140-145.

Step #3
With the pork loin at an internal temperature of 140 pull it off the grill and let it rest up to 145 final temperature for juicy and delicious pork loin.

What you will need to make this Homemade Bacon recipe:

UPDATED:
1 Pork loin (4-6lb roast)
4 cups water (boiled)
4 cups Ice Water
1.5 tbs Prague Powder #1 curing salt – (see link above)
1/2 cup or less depending if you want it less salty
1 cup brown sugar
1/2 cup Canadian Maple syrup
2 tbs garlic
1 tbs black pepper
1 tsp cloves
1 tsp coriander seeds
1 Large Ziplock bag

***HOW TO MAKE THIS RECIPE***

Canadian Bacon Recipe Step #1
First you will need to prepare a liquid curing brine to transform your pork loin into fresh bacon. Take all your ingredients above except your pork loin and place it into 4 cups of water to boil in order to dissolve the salts. Once the salts are dissolved, add in the remaining 4 cups of ice water. This should be enough to bring your boiled water down to a chilled tempreture.

Canadian Bacon Recipe Step #2
Next, once your curing brine is chilled you are going to place your pork loin into a ziplock bag and pour in your curing brine. close the bag up tight while trying to remove as much air as possible. Next you are going to place it in a bowl (to avoid potential leaks) and place it in the fridge for 4-5 days. Each day make sure to flip your bag.

Canadian Bacon Recipe Step #3
After 4 days your pork loin will be fully cured and ready to be smoked. Take our your cured pork loin and rinse off any bits of the brine then place it in a bowl of cold water for 1-2 hours. This will help remove some of the saltiness and give it a more balanced taste. Once that is done, take out your cured pork loin and dry it using paper towel and let it sit open to the air while you get your grill set up for smoking.

Canadian Bacon Recipe Step #4
Once you have your grill set up indirect for smoking you are going to place the cured pork loin on the grill opposite the coals and begin smoking using your favourite hardwood about 225 degrees for around 2 hours or until the internal tempreture reaches 145 degrees. Once your internal tempreture reaches 145 degree take it off the grill and let rest until cool.

Canadian Bacon Recipe Step #5
After it has cooled you are now ready to slice it up and begin to feast. (note: if you leave it in the fridge for a few days it will allow the smoke to distribute throughout the bacon a bit more.)
