To start this recipe you will need:
– 4lb chuck roast
– Worcestershire sauce
– Your favourite beef rub
– your favourite rib rub
First you will coat the beef roast with Worcestershire sauce followed by applying two coats of rubs. The base coat is will be your beef rub which will help pull out the beef flavour, the second one is applied lightly with a classic rib rub to add some depth and color as it’s cooking.
Once your beef roast has been prepped you will then place it onto your grill indirect and begin cooking for 4 hours using your favourite hardwood for smoky flavours.
After 4 hours you will then remove it from the heat and wrap it in tin foil, but before you do that you will place 1/2 onion, some garlic and 1/3 cup beef stock into the foil. When that is done make sure to wrap it tightly so that the moisture does not get out.
After an additional 4 hours *time may vary* you roast should be around 200 degrees. When it reaches its final temp *200 degrees* pull it off and let it rest for an additional 30 minutes.
After it has been rested, begin to pull it apart with two forks. It will be tender, juicy and delicious!
Serve with your favourite bun, taco, salad or on it’s own!
