Chef Tom tackles another brisket, Texas style. Instead of trimming out the point and flat and cooking them separate, we cook the full packer brisket and instead of foil we use butcher paper to wrap the brisket to help retain moisture and maintain our color.

BBQ Beef Brisket is one of the hardest cuts of beef to cook but when done right it will make you taste buds dance like at prom in 1976. This delicious BBQ Beef Brisket is so good you will want to try it out for yourself. We coated it with our incredible Postal Barbecue Southern Rub, to give a little sweet and heat flavours followed by hours of smoking on the charcoal bbq using our favourite wood smoke. We sliced it thin and let the meat speak for itself. Trust us, you don’t want to watch this video on an empty stomach.
we started by injecting the brisket with a blend of beef stock and spices to add some flavour into the meat. Next we liberally put on some of our Postal Barbecue handcrafted rub. We let it rest for about 1 hour while we prepped the grill using charcoal and the snack method so we could keep a nice consistent temperature for about 10 hours. When the grill is ready place your brisket on the grill for about 8-9 hours anywhere between 200f-250f. Mop brisket periodically to maintain moisture. After about 9 hours wrap your brisket in foil to leaving it on the grill to help tenderize it. after about 11 hours your brisket should be well cooked and ready to slice.
