We smoked a pork butt hot and fast at around 300ºF on a ceramic grill. No extra flavor beyond the charcoal and it was just the right amount of flavor. It finished up at 197ºF internal temp at roughly the eight hour mark. We let it rest for 45 minutes and chunked it up ready to serve to the crew.
