HOW TO MAKE BACON WRAPPED SAUSAGE
______________________________________________________________
INGREDIENTS:
– 4-5 Sausages
– 1 Package of Bacon
– Hoagie Buns
– 2-3 Onions (sliced thin)
– Postal Barbecue Original Rub (see website to order)
– 1/2 tbsp Brown Sugar
– 1 tbsp Balsamic Reduction (add to taste)
STEP #1
To prepare your smoked bacon wrapped Sausages you will start out by wrapping your sausage with bacon. During this step you will want to give the bacon a bit of a pull as you wrap it so that you don’t need toothpicks to hold it together. Easy right… I always recommend thin or regular sliced bacon for this as it cooks and renders it’s fats faster. Next, apply your BBQ rub. We used our Postal Barbecue ORIGINAL RUB which you can pick up from our webstore.
Step #2
With your bacon wrapped sausages prepared, place them on to the grill using indirect heat. We will be cooking these between 275F-300F. Lastly add in your favourite hardwood to the coals to add some nice smoky flavour to the bacon.
Step #3
While your bacon wrapped sausages are cooking, begin to prepare your balsamic infused caramelized onions. To make this you will need a few onions – you will want to use 1 medium onion per sandwich (if making sandwiches). Thinly slice the onions then place them into a skillet set on low with a nob of butter and give them a mix. Next add in your brown sugar to add a little bit of sweetness followed but the balsamic reduction to taste. The balsamic will add a nice tang which compliments the richness of the bacon and sausage.
Step #4
Once the bacon wrapped sausages have reached 165F internal tempreture they are done and you can pull them but my personal preference is to take them to 175F to allow the bacon to firm up a bit more and help with them becoming more easily bite through. Once they are off the grill, build your sandwiches with the onions and top it with some hot pickled banana peppers and you’re done!

HOW TO SMOKE PORK LOIN ON A PELLET GRILL
______________________________________________________________
INGREDIENTS:
– 5-6lbs Pork loin RIB HALF
– Mustard
– Postal Barbecue Original Rub (see website to order)
APPLE COLESLAW
– 1 Sliced Apple
– 1-2 cups Coleslaw
COLESLAW DESSING
– 1/2 cup Mayonnaise
– 1/4 Apple cider vinegar (add more to thin it down)
– 2 tbs white sugar
– 1/4 tsp smoked paprika (or to taste)
STEP #1
To prepare your smoked pork loin, take your full 5-6lb (approx.) and apply a coating of yellow mustard and then season it using our Postal Barbecue ORIGINAL RUB or your favourite pork style bbq rub.
Step #2
With your pork loin prepared, set up Camp Chef Pellet Grill for cooking around 275F and set your smoke setting to 10. With the Camp Chef Woodwind 24 set up, place the pork loin into the pellet grill and insert your meat thermometer in order to monitor the internal tempreture of the pork loin as it smokes away. Once everything is in the grill and set up, close the lid and begin cooking until it reaches an internal tempreture between 140-145F. This should take between 2 hours – 2.5 hours depending on the size of the pork loin rib halve section.
Step #3
After about one hour open the pellet grill and give your pork loin a spritz with a half and half mixture of apple cider vinegar and water. Then close the lid and continue cooking. During this time, also mix together all your ingredients to make your apple coleslaw and let it sit in the fridge until your pork loin is ready.
Step #4
Once your pork loin reaches around 135F open up the grill and brush on your some bbq sauce all over then Pellet cooker to let the sauce set. When your smoked pork loin reaches 142F remove it from the smoker and let it rest. It will rest with a finishing temperature between 145F-147F and be INCREDIBLE juicy and delicious!
