HOW TO SMOKE SAUSAGE IN THE PIT BARREL COOKER
______________________________________________________________
INGREDIENTS:
– Sausage (your choice)
– 1 Head of Cabbage
– 6 Cloves of Garlic
– 1 Pinch of Sugar
– Postal Barbecue MAD COW Rub (see website to order)
STEP #1
To prepare your smoked sausage and cabbage dish start by setting up your Pit Barrel Cooker or grill of choice for cooking indirect at 275F. Next place your sausages into the sausage hanger and place into the pit barrel. Next, add in some cherry wood for some great smoky flavour and begin cooking. You will be cooking until they reach a minimum internal tempreture of 165F – I cooked mine to around 175F which i like more for the texture.
Step #2
With your sausage smoking away in the pit barrel cooker, begin to prepare your cabbage by cutting into quarters and then chop into large pieces. Also chop your garlic in to thirds. Once everything has been chopped, place everything into your cast iron skillet and begin cooking. Once your cabbage is in the skillet season it with our MAD COW rub, or favourite bbq rub. Also, to add a little bit of sweetness add in a pinch of sugar. Lastly add in about 1/4 cut of water to help steam the cabbage as it cooks. Cover with a lid while cooking.
Step #3
Once your cabbage is softened to your preferred doneness remove it from the heat and pull out your smoked sausage. Plate it up and let those flavours come together in a single bite! YUUUMM!

HOW TO SMOKED A STRIPLOIN ROAST
______________________________________________________________
INGREDIENTS:
– 1 6-8lb striploin roast
– Oil as a binder
– Postal Barbecue – MAD COW RUB (or rub of your choice)
STEP #1
To prepare your striploin roast, first you will want to remove all the exterior fat and silverskin to better expose the meat. Also, removing the fat will help give you a better sear during the searing process. Lastly, trim up any loose bits of meat that will just be in the way. With your Striploin roast cleaned up, apply a thin layer of olive oil to the roast as a binder, and then apply your BBQ Rub. We used our made cow beef rub which you can purchase on our website.
Step #2
With your Striploin Roast all prepared, place it onto the grill opposite the coals and begin smoking your roast between 225F-250F. We will be bring the internal tempreture up slowly to 120-125F. When your Striploin Roast reaches around 85F internal temp, open up the grill and flip the roast just to promote some even cooking. Quickly close the lid and continue cooking to your target temp of 120F-125F.
Step #3
After about 1 hour 20 minutes your striploin roast should be at or nearing 120F-125F. At this point remove it from the grill along with your grate, then either add in a full chimney basket of fully lit briquettes or mix together your remaining coals and let them get fully lit.
Step #4
With your coals fully lit and ready for your sear, place your grate back onto the grill followed by your striploin roast. Spin the roast over the coals and begin searing on each side twice spinning the grate exposing a cool section of the grate with each flip. Once your 4 minutes are up, remove it from the grill and let it rest about 10 minutes before slicing in and enjoying your feast!

HOW TO SMOKE SPARE RIBS LIKE AARON FRANKLIN
______________________________________________________________
INGREDIENTS:
– 1 Rack of Pork Spare Ribs
– Apple Cider Vinegar
– BBQ Sauce
RUB
– 1 Part Kosher Salt
– 2 Parts Ground Black Pepper
– 1/4 part Paprika
STEP #1
To prepare your spare ribs first take a large knife and cut away the main bone cutting through the cartilage. Next, trim your spare ribs to length and slices off any thin areas making your ribs look sleek. Once the top has ben trimmed up nicely flip the ribs over and remove the rib skirt and thats it. One this rack of ribs we are leaving the membrane on because that is what Aaron Franklin does and hey, it’s his method we are using.
Step #2
Once your spare ribs have been trimmed up, beginning on the backside, apply a thin layer of yellow mustard. Next, mix together your kosher salt, black pepper, and paprika in a nicely even layer. Flip your rack over and repeat this step on your top “presentation” side. Once your ribs have been trimmed up and seasoned place them onto the grill using indirect heat and begin cooking. Our desired tempreture will be around 270F and we used Cherry wood, but use whatever wood you prefer.
Step #3
After 1.5 hours, open up the grill quickly and spritz them with some apple cider vinegar then close the lid and continue cooking for another 1.5 hours.
At the three hour mark, spritz the ribs thoroughly to remove any surface smoke then apply your BBQ sauce that has been cut half with apple cider vinegar. Using your hands, spread the sauce around then close the lid for about 10 minutes to let the sauce set up. Once it has set up flip the ribs and repeat the previous step.
Step #4
After Your sauce has set on both sides, remove the spare ribs from the grill and place them into a foil wrap. The foil wrap will help tenderize the ribs as the cook. Once the ribs have been wrapped place them back onto the grill for 2-2.5 hours or until they are tender. Once they have reached your desired doneness, remove them from the grill and let them rest in the foil for 30 minutes to help let the ribs relax. Then slice and enjoy!
