Ingredients you will need to make this Smoked Pork Loin Recipe is:

1 Pork loin Roast 4-7 lbs
BBQ Rub
BBQ Sauce

—- if making sandwiches you will also need ——

Kaiser Buns
Coleslaw
Spicy mayo

Smoked Pork Loin Step #1
Start by rinsing and drying off your pork loin. Once dried, begin to apply your favourite BBQ Rub and let rest for 30 minutes. ** Note, we recommend leaving the fat on, this helps keep the pork loin more juicy.**

Smoked Pork Loin Step #2
Set up your grill for indirect cooking and bring it up to a cooking temp of 250-275 degrees. Once the grill is up to temp, place the pork loin opposite the coals and begin cooking for around 2 hours.

Smoked Pork Loin Step #3
After 1.5 hours you will notice that the pork loin has taken on a nice color and now is the time to add a thin layer of bbq sauce to help add to the flavour profile of the bbq smoked pork loin. Once sauced continue cooking for another 30 minutes.

Smoked Pork Loin Step #4
After 2 hours your Smoked pork loin should be done. At this time, take your meat thermometer to read the internal tempreture. Your pork loin will be done when the internal temp is a minimum of 145 degrees. NOTE: Pork needs to be cooked to a minimum of 145 degrees to be safe for eating.

Smoked Pork Loin Step #5
Once your Smoked Pork Loin is at 145 degrees internal temp, take it off the grill and let it rest a minimum of 15 minutes to allow the juices to even out. This will help make your Smoked pork loin more juicy and tender.

Smoked Pork Loin Step #6
Lastly, slice thin and enjoy.

INGREDIENTS THAT YOU WILL NEED FOR THIS COOK:

1 3-4lb pork loin
Fresh Thyme – about a hand full chopped
Fresh Rosemarie – about a hand full chopped
Fresh Basil – about a hand full chopped
6 Cloves Garlic
Olive Oil
Salt
1/2 tsp Pepper
**Optional Wood Grilling Plank**

***HOW TO MAKE THIS HERB CRUSTED PORK LOIN***

Step #1
First you are going to prep your herb mixture by chopping your Thyme, Rosemarie, Basil and garlic and placing them in a bowl. You will want there to be about a handful of each when chopped (adjust to your taste). Next you are going to add a 1/2 tsp pepper and then your oil to form a paste like consistency.

Step #2
Once your herb mixture is mixed together, you will rub it all over your pork loin and then place it in the fridge for one hour. It is at this point you will begin soaking your wood plank and set up your grill. After one hour pull out your Pork Loin and place some fresh kosher salt onto both side and place it with the plank onto the grill.

Step #3
Once the pork loin is in the Pit Barrel Cooker you are going to begin cooking it for around 1hr 30 mins at 350 degrees. The Pit Barrel traditionally holds a temp around 275 so to increase the temp you will need to open the bottom vent a touch and possibly even crack the lid for a few minutes to get your coal temp up a bit. We recommend using a pit thermometer to help see the actual temp.

Step #4
After 1hr 30 minutes your herb crusted pork loin should be done. Make sure to check that the internal tempreture has reached 145 degrees. Once it is done you will pull it off the grill and let it rest for about 20 minutes before slicing into it.
