HOW TO SMOKE HAM ON THE BBQ
______________________________________________________________
INGREDIENTS NEEDED:
– 1 Spiral Cut Ham
– Water to spritz
– MAPLE GLAZE (RECIPE – https://youtu.be/fer4jxHXAQ0 )
– 1/2 cup maple syrup
– 1/2 cup brown sugar
– 1/8 apple juice
– pinch of cinnamon (don’t miss this… soo good).
METHOD:
Step #1
To Start off, get your grill set up for smoking at 250F with your favourite Smoking wood (we used maple). While your grill is coming up to tempreture spritz your ham with water as this will help hydrate your ham due to it being pre sliced. Once your Grill is up to tempreture place it on the grill and let it smoke for around 1 hr.
Step #2
After about one hour of smoking, remove the ham from the grill and wrap it in foil. This will help speed up the cook as well as keep the moisture in. This method cooks with moist heat vs dry heat which is helpful for a better end result.
Step #3
Once the Ham has reached 130F remove it from the grill and transition into making your glaze. To make your glaze combine the brown sugar, maple syrup, apple juice and cinnamon together and bring it to a simmer for 1-2 minutes. With the Glaze finished place the ham back on the grill and apply the glaze the the entire outside surface of the ham. When that’s done close the lid for 5-10 minutes to let the glaze set up.
Step #4
With the glaze set, remove it from the grill and take a photo before slicing and enjoying the feast!

HOW TO SMOKE HAM ON THE PIT BARREL COOKER
______________________________________________________________
INGREDIENTS NEEDED:
– 1 Spiral Cut Ham
– Spritz ( 3oz water, 3oz apple juice, 2oz Whisky)
WHISKY GLAZE
– ¼ cup maple syrup
– ¾ cup brown sugar
– 2oz Shelter Point Whisky
– 2oz Barrel of Sunshine (orange, Spice, Maple Liqueur)
– pinch of cinnamon (don’t miss this… soo good).
METHOD:
Step #1
To Start off, get your Pit Barrel Cooker set up for smoking around 275F with your favorite Smoking wood (we used Whisky Staves). While your grill is coming up to temperature spritz your ham with the whisky spritz as this will help hydrate your ham due to it being pre sliced. Once your Grill is up to temperature place it on the grill and let it smoke for around 1 -1.5 hrs.
Step #2
After about 1-1.5 hours of smoking, remove the ham from the grill and wrap it in foil. This will help speed up the cook as well as keep the moisture in. This method cooks with moist heat vs dry heat which is helpful for a better end result.
Step #3

Simmer until the glaze starts to grab onto the spoon a bit. With the Glaze finished place the ham back on the grill and apply the glaze the entire outside surface of the ham. When that’s done close the lid for 5-10 minutes to let the glaze set up.

With the glaze set, remove it from the grill and take a photo before slicing and enjoying the feast!
