    Great video Tom. Re: frying the tortilla. One thought I had was using a tomato can with holes poked in the sides. Gets hot oil to the bottom of the tortilla and eliminates using the ladle for handling hot oil. Safer? You might still have the puffing problem and need to press down.??? Loved you plug for Kent – he, along with you, are two of my favourite YouTubers! Cheers!

    Great job Chef T! you asked what i want to see you cook …. well – this is kinda what you asked…. How do you feed a crowd a variety of fresh grilled food when all i have is one ceramic grill. That is, how do i cook earlier in the week, store the meat then serve and it be as good (or almost as good) as fresh off the grill. Some meats store better the others. Some storage methods are better than others. Getting the cold (or frozen) back to that freshly cooked state (or as close as we can) ????? Give it some thought and I'll be watching…
