HOW TO COOK T BONE STEAK ON THE GRILL
______________________________________________________________

INGREDIENTS NEEDED:

1or 2 T Bone Steaks (1.5-2 inches thick preferred)
Kosher Salt
Fresh Black Pepper
Extra Virgin Olive Oil

METHOD:

Step #1
To start off choose a good T Bone steak that is between 1.5”-2″ thick. To prep your t bone steak, apply 1/2 tsp of kosher salt per lb of meat and then place in the fridge overnight to dry brine the meat. This will help season the meat and keep it more juicy after the cook.

Step #2
After your steak has been dry brined overnight prepare your weber jumbo joe for low and slow cooking at 225F. When your tempreture is stable place your T Bone steak onto the grill opposite the coals and place your digital leave in thermometer into the thickest part of the steak. Once thats done close the lid and begin cooking slowly. When your steak reaches between 85-90F open up the grill and flip the steak to help it cook more evenly.

Step #3
When your T Bone Steak reaches 110F-115F remove from the grill in preparation for the sear. Also remove the grate to allow the grate to cool. To prep the steaks, dry the surface with paper towel and then apply extra virgin olive oil followed by a generous amount of freshly cracked black pepper. That’s it. When you steak is prepped finish setting up the weber jumbo joe and Slow ‘N Sear for the sear by adding in just under half a basket of fully lit briquettes (1/3ish).

Step #4
With the grill and steak ready to go, insert the grate and quickly add the steak to begin searing. You will sear one minute on each side twice spinning the grate with each flip so that your cooking on a cool grate vs a smoking hot grate. Sear this way until you have reached your desired tempreture and then remove from the grill.

Let it rest a few minutes then slice in and enjoy. YUM!

    Looks like you had to make some adjustments to the top vent during the cook. Approx. 1/4-1/3 open to start and almost all the way open at the end. Can you advise on the bottom vent adjustments to reach the desired temp of 225? I already have the Jumbo Joe and will be ordering the charcoal basket ASAP. Love my Slow N Sear and 22" Weber!

    Maybe it's worth mentioning that this is the smaller version of the SnS, the "Slow N Sear Charcoal Basket" that fits the 18" Jumbo Joe, and it doesn't have a water reservoir on it (just an additional plate for heat barrier). I got just one like it for my Joe, it's great! Thanks for the video, Jabin!
