I have watched a lot of your video's. This is now one of my favorites for a lot of reasons. Stuffing the pork shoulder with the different cured meat is genius. The explanation of the proper temperature really helps me understand why you are working to a specific temp. I was surprised to see that after a few hours the internal temp was still low but and hour after taking it off the grill it was still too hot to handle. I was amazed the charcoal lasted that long and the slow feeding of the Pear wood makes total sense once you see it. Thanks guys!

How on earth do I get less paranoid about cooking meat? I'm always afraid it's undercooked, so I always end up overcooking it. Alas I don't have any fancy grilling equipment, but how would I become better at cooking various meats?
