    Mr. Wolfie, i recently subscribed to your show, and i am a 55 yr., old irishman from rural kentucky. I was wondering if i have question or comment, do you prefer to be addressed by a name or just direct to thewolfepit, as i do not want to be rude and i just recently started using the internet for entertainment and learning new recipes, etc…appx., a year ago. Anyway, i was also curious about where your show is based out of, you do not seem to have a southern accent like me, but many of your recipes that i have seen seem to have southern origins as their base. Have a nice day

    Clams with unopened shells after cooking weren't dead before cooking (that's clams with OPEN shells that don't react to taps)
    Sometimes the heat causes the muscle to lock up instead of relaxing, which causes them to not open. They're still safe to eat, it's the clams that died before being cooked and so opened before cooking that you gotta worry about

    I've always cooked them similar to this but I was looking for something slightly different and saw your recipe. I love spice, so I think I'll try the jalapenos this time and the lemons. Otherwise it was similar to my own version. P.S. a tip to ensure they don't have sand inside them is to soak them in cold water with a lot of salt in it to mimic sea water. They will naturally spit the sand out of their shells.

    Do canned smoked clams taste anything like steamed clams? I've only tried canned smoked. They tasted kind of fishy and I was wondering how steamed clams taste in comparison
