Leave the steaks to rest for longer and introduce their juices back into the sauce before you add the cream. You won't have pools of red on your plate and the steak won't be as tough

Are you people stupid or what! To the people who are saying that it is raw, it is not !!!! it is seared at first Dummies !!! Then after he starts his cream, he ADDS IT BACK IN in order to cook for another 5 to 7 minutes. Are you stupid, are you deaf, do you not understand, comprehend? WTF !!! A Very SMALL PACK OF MORONS OBVIOUSLY. Plus Who the Hell Would Eat Steak any More than Medium Rare to begin With !! I'll tell you, not true meat eaters that's for sure.

I appreciate people putting videos up like this, always down to watch how someone else does their thing… But, if your going to call this steak Diane then you need to follow at least the basic rules of the dish, one the steaks are too thick, and two you didn't flambe the cognac… It adds a depth of flavor that just simmering doesn't achieve, but love the video other than that and great commentary
