Made them this morning and they were really good using the fresh green beans that I got at the market. I was a little skeptical of cooking them six plus hours but they were great.

I have had little luck with smoked pork hocks in recent years. Living in the Southwest, they are hard to come by and don't have much meat. Instead, I have been using smoked pork neck bones and they turn out really well.

Larry, did you smoke the ham hocks on one of you 2 dozen contraptions, or did you buy them already smoked?  I don't have a smoker, and don't know if buying them already smoked is an option.  Thanks.
