    Been making these for years, except enchiladas. Ancho garlic rub. Smoke over mesquite wood from my property for about three hours. Then, into a covered cast iron with a cut up onion for about 5 to 6 hours at 225 in the oven. The meat just falls apart. The onion juice and rendered fat make a killer broth that then gets used to make the chili gravy for the enchilada sauce, which then goes on the shredded tri tip enchiladas. Killer, if I do say so myself.

    I see you did the bacon explosion fatty about 6 years ago. I'd love to see you do a breakfast fatty. On my list of things I want to try, and would love to see your take on it before I try. Thanks.
