HOW TO SMOKE PORK CHOPS ON THE GRILL
______________________________________________________________

INGREDIENTS NEEDED:
– 2 inch thick pork chops
– Kosher Salt (skip if rub includes salt already)
– BBQ Rub

METHOD:

Step #1
The easiest way to get your desired thickness for your pork chops is to cut it yourself. We cut these from the sirloin portion of the pork loin but the centre cut section works great as well. Cut your pork chops around 2 inches thick then season with kosher salt and apply your favourite BBQ Rub. NOTE: If your BBQ Rub already has salt in it there is no need for the kosher salt – You don’t want to double salt your meat.

Step #2
With your grill up to 225F, place the Pork Chops opposite the coals and place on your Maplewood or hardwood of your choice. Close the lid and begin cooking and smoking your chops for around 45 minutes until they have reached an internal temperature of around 130 degrees F.

Step #3
Once your pork chops have been smoked, spread out your coals and get them to a medium to medium -high heat. add on the opening of your grill grate and begin searing the pork chops for about 45-60 seconds on each side until they have reached an internal temp of around 143. They will then carry over to around 145F.
