Hey Chef we have the same smoker but I was thinking about bringing up slow about 250 I was going to pull it about 130 and glaze but you're cooking pretty high and glazing through the cook it doesn't burn any suggestions

I'm going to do this for Christmas. FYI, some of the measurements are different on the website compared to the video. Looks like all the ingredient measurements are doubled on the video. Thanks!

Doing this right now. But, in a kamado…..and I'm using different rub….and regular mustard. Ok, I'm doing something similar to what Chef Tom is making, but still Same Same.

Thanks for the nicely done video Chef Tom. I am going to try this tomorrow using fresno pepper powder from my garden and alder wood for smoking. What wood did you use or recommend? Happy New Year-BeerDaddy

giving this one a try today. what smoke pellets would you recommend? I was thinking hickory/apple mix. Also some members of my family are well…. sissies and are afraid of the jalapeño mustard. Was thinking about the stock yard smoky mustard as a substitute. Won't be the same consistency though.
