This year, I will definitely try your idea of lighting the coals, then starting to cook the food BEFORE they are fully "gray". I still have LOTS to learn, and always seem to worry that there won't be enough heat to cook the food, etc. but last season, I did use the indirect method (after coals were gray) for my chicken and it came out PERFECT!
I guess old habits really do "die hard", eh? 🙁
(but I NEVER lit my grill with gasoline like my father did, at least !!! LOL)
