Hey get chef tom to do a product walk thru. Of the rubs, marinades and sauces your selling. What flavor notes do they have? Which are sweet? Which are savory? Which works equal as a steak rub and a brisket rub etc. What sauces have bite …. I'd watch that and order some too!
you could dice the skin, flash fry it up and add it to the chicken salad right before eating for some textural contrast.

What brand is the chicken you are you using? Where do you get them? You can’t roll back the skin like that on store bought chicken. The skin is to thin.
