In this Easy Smoked Chicken Recipe, we will teach you how to cook a full Lemon Pepper Chicken using the weber jumbo joe grill. This Smoked Chicken Recipe is one that is simple to do and tastes great! We made this on the Weber Jumbo Joe, but you can also do this on any grill using the indirect cooking method. Everything you need to know is below.

HOW TO COOK A WHOLE CHICKEN ON THE WEBER JUMBO JOE
______________________________________________________________

INGREDIENTS NEEDED:
– 1 Whole Chicken
– Kosher Salt (1/2 Tsp/lb)

Lemon Pepper Rub:
– 2.5 tbs Dried Lemon Zest
– 2 tbs Black Pepper
– 1/2 tbs Garlic Powder
– 1/2 tbs Onion Powder
– 1/4 tbs Sugar

METHOD:

Step #1
To Start off, you will need to piece down your chicken so that it will fit well on the weber jumbo joe grill. (see our video on how to do that here – https://www.youtube.com/watch?v=yB3aFkmYySQ&t=6s ). Once cut into our sections, apply the salt to the outsides of your chicken. Use 1/2 tsp per pound. After Chicken has been salted, apply your Lemon Pepper BBQ rub to the entire outside of the chicken. With the simple prep done, get your grill set up for cooking indirect at 325F.

Step #2
With the Grill up to temperature and your wood smoking clean, place the Lemon Pepper Chicken Pieces onto the grill and begin cooking. It’s important to use a good digital meat thermometer to monitor the internal temperature of the Chicken as it cooks. Close the lid and begin cooking until it reaches an internal temperature between 165F in the breast and 175-185F in the leg portions.

Step #3
With the Smoked Chicken up to temperature pull it off the grill and let it rest a few minutes before slicing into it!
