    I do mine over coals with sm applewood mixed in. I flip em every 4 minutes.
    Adobo /bd spelling oil salt pepper cajun.
    Takes 50min to an hour….rest in foil for 15 min n some yummy yummy! ⚡✌?

    😀 I was pitman jr at a rural bbq joint in NE Alabama for 4 years. Pork butts, ribs, briskets… all SOP. Our art was when it came to chicken quarters. I left the breakfast line at 7:30 am to start the chicken. Pig and cow got started by the owner at 4:00 am. Best years of my life until I met my beautiful wife. Now I rock the smoker and her world.

    guys I love your vids but I got to say those quarters look over cooked as hell! probably wrong but no one will eat that black stuff.have you guys tried coating in mayo which will keep chicken moist and end up golden?
