30 years ago I started making meatloaf in a bundt pan, same reasons you gave, more crispy surface area. With that method I had to bake the bundt on something to catch the grease because no bowl in the middle. Great recipe, I'm going to start using chorizo.

I really like your hygiene practices! I do not like chefs using their hands, tasting with a spoon and using the second spoon for another taste without cleaning the spoon. The recipe looks delicious! Love the crown idea. I am definitely going to try this recipe! Great Job!!!!!
Made one of these last night, and the family and I all loved it. The capers, chorizo and mushrooms offer really interesting flavor, and the bacon was awesome, especially after crisping it under the broiler for just a couple of minutes. I would say that you could easily serve 12 – 14 with this dish, but we're happy to have leftovers. 🙂
I noticed in some of your videos, you use the top shelf on your Yoder and some videos you use the bottom shelf. What is the reasoning behind using top shelf vs. bottom shelf…..I'm curious as I'm thinking about getting a Yoder YS640 in the near future.
All those great ingredients and you use prepackaged ground beef and sausage in a tube? Do you not have a local butcher to get fresh ground meat and sausage?

Don’t ever use that kind of chorizo, you should only use real pork only chorizo from Spain, no innards
