Make your own seafood stock by boiling chicken stock with those fish skins, lobster shell, and shrimp tails. Easy no waiste.

this reminds me of an incredibly similar if not same French soup called bouilliabaise
In my own style I would use chicken + beef + pork stock for this soup. Add some chili and lime.

Why you take the shell of the shrimp? If you left it on all the juice and flavor from the broth makes it taste better

Here in Spain we make a similar soup, but we actually add the shells to it,and then filtrate the liquid
