Made this tonight, very good… my problem was that the brisket cubes bark got way too black/ charred and not sure why… internal temp was actually only 185 ish when I took them off… thinking next time I prob won’t put on the jalapeño mustard as a binder

Hey Chef Tom, any chance you could do some jerk pork? I went to Jamaica over 20 years ago and am still trying to recreate that jerk flavor.
I'm going to try this but instead of adding water in the end I'm going to add bourbon. Just a splash so not to over power.
