    I like to take my steel rod knife sharpener and poke a hole through the center of the tender loin then stuff conecuh sausage link in the middle rather than split the loin. This way it retains all the fat and smokey goodness of the sausage. I call this a "double play". To take a notch higher, wrap the the stuffed tenderloin in bacon for the "triple play". I like your method, too, because one could add some jalapenos or other spices. I usually serve medallions with some Sweet Melissa's jalapeno jelly on the side. Adds some sweat heat to the finished product. Thanks for sharing.
