this looks great! love fried rice, such a satisfying affordable meal. I recently learned a fun way to do incorporate the egg — separate the whites and yokes, cook the whites and then set aside to add in at the end, and mix the yolks into the rice, stirring with a chopstick to try to get every grain of rice coated. it really upgrades the texture! love everything you do!

This recipe is similar to mine, I stir fry diced up luncheon meat with red onions, add in day old rice seasoned with garlic and onion powder as well as salt. Then add in a mix of peas, carrots, green beans, and corn, then mix in soy sauce and five-spice. I pair it with a tomato and egg scramble, so I omit the egg in the rice. I usually have this combo for breakfast/brunch.

The best I ever had was from a Taiwanese take-away and it was done with fish. OK not to some peoples taste but given a choice of red meat or fish I usually take the fish unless it's lamb or venison. Vegetable fried rice makes an excellent breakfast if you are doing hard work too.
