HOW TO MAKE PULLED CHICKEN
______________________________________________________________
INGREDIENTS NEEDED:
– 1 or more Whole Chickens
– BBQ Rub
– 1/4 cup of melted butter
WHITE SAUCE Recipe
– 1cup mayo
– 1/4 cup apple cider vinegar
– 1/2 – 1 tbs black pepper
– 1/2 tbs sugar
– 1 tbs horseradish
– 1/2 – 1 fresh lime
METHOD:
Step #1
To Start off, remove the backbone from the chicken and slice through the breast bone splitting the chicken into two halves. Next, inject your melted butter into the breast and thigh portions. With your bird injected, spray it with a little bit of olive oil then apply your BBQ rub to both sides of the chicken including under the skin where possible.
Step #2
Set up your grill for cooking around 275F. With your grill up to 275F, place the into the Pit Barrel Cooker and place in your hardwood of your choice. Close the lid and begin cooking for around 2 hours or until your chicken has reached an internal temp of 165F.
Step #3
Once your chicken is done, remove them from the Pit Barrel Cooker and let them rest for around 15 minutes. This will distribute the juices as well as cool the chicken slightly so that you can then pull it apart easily.
Step #4
With your pulled chicken done, begin by building your sandwich. We used our white sauce, slaw, and pepperoncini’s and was it ever delicious!
