    My late husband used to make the pork schnitzel for me all the time, with the cornbread coating. This brought back memories for me because he used to make it the exact same way you just did! 🙂

    Looks like a FINE plateful, and I do love some of your lazy ideas. Doing it all on one plate, and using the two most versatile tools in the kitchen, your hands, makes perfect sense. But why don't I think of these things? I *do* use a lot of corn meal, like you. In a lot of cases, I prefer it over bread crumbs.

    Gotta love the Schnitzel. Did you know it was the basis for Chicken Fried Steak? German immigrants in northern Texas, during the 1800's, couldn't find veal cutlets, so they used beef round steak instead. It became a hit. The Texas Restaurant Association estimates that 800,000 orders of Chicken Fried Steak are made every day in Texas. I love em both.

    Good grief that looks OUTSTANDING! Loved the use of cornmeal instead of breadcrumbs~ nice change. Your onion gravy looked fantastic, I have got to make it here. You sure got 3 of my favorite foods on a plate with this one. I bet the limas sure took to that gravy perfectly. Nice crispy schnitzels too, beautiful.
