Sounds great! But why, may I ask do you use gloves when mixing your food? It is a waste. Those gloves will sit in a landfill for years. Beyond that, your food will taste better without gloves – you will feel it better.

Bacon is made from pork belly: the flesh that's on the underside of the pig. That means bacon is a subset of pork belly. Pork belly is full of meat that would be rather tough if it were cut and cooked the way normal pork is cooked. Removing the skin, curing it and thin-cutting it into bacon is one way to make the pork belly turn out delicious. That form of it does well with frying and roasting, giving up fat in favor of the crispiness we love to eat. Then there's uncured bacon, which as far as I can tell, exists mostly so that people who cannot eat the salt, smoke, nitrites/nitrates, and other components in regular bacon, can still make their own bacon that they CAN eat.

On the other hand, there's pork belly, sold whole with skin, or sliced without skin.

There are hundreds of Asian and European recipes that use it without skin, and in every case, there's seasoning added for it to slow-cook with, so you end up with something that has flavor. If you're fortunate enough to have some with skin, you can also score the skin down to (but not into) the fat, and roast it to create an absolutely delicious thing. (You may also want to marinate it before roasting with additional flavoring agents like garlic, ginger, etc.) It's almost always slow-cooked in order to get the meat to cook and the fat to transform into liquid wonder.

I made the OINK Balls for my Christmas Eve Appie Party with my family. We skipped the traditional turkey. They worked out awesome. I substituted a seasoning mix for an asian flavor. They were supper tasty. Since we all do the Keto diet they were a hit. They are now on my menu repertoire.

Bad news Wolfie . Came across what looked like an ordinary can of tuna. Brand name El Dorado. On the front of the can it said "Tuna with added textured soy protein" .First time I have ever seen that. They put that S in everything.
