I used to work at FOOD LION, and my friend and I came across these way back in the early 90s. To this day, we still make jokes about it. I think he bought a can just to see what it looked like… All over the parking. I do know, my grandma grew up eating pork brains and eggs. I heard she gave some to my brother when he was a kid, but didn't tell him what it was and he loved it, until he found out what it was.

My grandparents had pig-killings twice a year, but I have never seen such colored pig parts, ever. "head cheese" is what pig brain is, right? Well, that's not pink. So, this food is really weird looking. 😀

Pork brains are actually pretty delicious. They have very smooth tender creamy texture kinda tofuish like and combined with fried onions on lard and eggs salt and pepper make great snack. It’s very traditional food in my country when it comes to something that translates into English as “pig killing”. Whole family comes together to help slaughter a pig and everyone gives helping hand with various stages of meat preservation and preparation until whole pig has been processed including skin and lard. The brain with eggs is usually served as a brunch spread on a thick piece of bread before main meat tasting at lunch to all members. (Accompanied with mullet hot rum) Don’t judge until you taste it prepared from fresh ingredients. Not sure about the can product which looked very unappealing compared to the actual dish it’s supposed to be served as.
