The Motz video for this burger everyone knows about uses a deli slicer, literally says to "taper" when smashing yet you give him no credit. Introducing tri-tip seasoning about kills the simplicity of this burger entirely. The crown of those buns look too thick and bready At least you gave him a shout out and credit for "letting it ride". Great sear, well executed and I agree with mustard and pickles. The tri-tip seasoning is a few points off as well as cutting it in half(!!!) . That burger is definitely an A, the video is a B minus at best.

Made this a few days ago. WOW this was one fantastic burger!!!! I’ve made plenty of smash burgers b4 but I believe what takes it to the top is grinding up a brisket. I don’t think I’ll ever b able to go back to regular 80/20 from the grocery store again!

My son and I visited Wichita and ATBBQ over the Memorial Day weekend. I was just shopping for sauces and spices and my son said "hey, look at that". I looked out the door and there was Tom. Doin somethin chefy. Clearly I know that this is a thing that happens at the store but it took me a good few seconds to process what I was looking at.
