I cooked a mean couple of steaks last night….a very nice sirloin, perhaps my favorite cut, and a KC strip. smoked with combo of cherry and post oak wood chunks for about 40 minutes then a quick sear over hot coals, let rest for a few minutes with some pats of good quality butter(Kerry Gold is nice)…lord in heaven. so good. add in some grilled asparagus and its food that eats like a meal.
if you are doing a "Wichita" sear, shouldnt you be calling that a KC strip loin not a NY strip??? us Kansas folk are mighty proud of our beef, love you NY but you got nothing on Kansas beef.

Amazing, another great video from ATBBQ. Chef Eric you may have killed my prime rib roast for the Holidays with this one. Also, for those that have family that like their beef well done this is method is a great way to allow those to eat their "burnt" steak.
Good timing too as I have been seeing pretty decent prices on whole NY strips lately at both my local Costco and grocery (Giant). Bar none my 3 favorite chefs in no order… Eric, Tom, and Bradley Stevens (Chuds BBQ).

Because the heel pieces have that "bark" on one side, do you still sear both sides of the "caps"? Definitely going this route next time round. Love those "Wichita Lines" . . .

looks great but im not gonna take a whole strip loin and cook it all at once. that just sounds like im at a major loss unless im feeding a LOT of people. looks great probably tastes great but ill save my whole strip to make individual steaks.
Where do you store the slow roller? Especially when it is hot. That's the only down side I see to that system.
