Great video. If you want to cheat or do not have access to all the ingredients, Walkerswood jerk sauce is the next best thing to use.

BTW: I don't know if you are aware, but I found out that the Allspice is the fruit of the Pimento Tree.
Could you do this in reverse? Cook indirect up to ~140/150 and then sear to finish them off? Would there be much of a difference in the outcome? These look fantastic!
