A good hand press jaccard utensil will help tenderize and absorbtion of marinade. It is a plastic utensil with a group of needles that when pressed into the meat, it creates appx. Small punctures in the meat. Cost about 12 bucks, works like a stapler is closest comparison.

I’m really into grilling on my Kamado, but I’m no natural. I hate when these videos don’t tell you how much of each spice goes into the marinade or brine.
It looks really good. Would it have benefited with a few days of aging and some meat tenderizer in the brine? Just a thought. Great vid, as always.
One thing you could do is after the brine time (LOL), pat the steak dry and cover with coarse sea salt for 90 to 120 minutes. Brush all the salt off and then grill. The sea salt should help tenderize the steak even more.
