    I made your casserole for dinner tonight and it was delicious.  I did use a dutch oven after browning the beef and sautéing the bell pepper/onion/garlic veggies because I didn't trust myself not to splatter the sauce all over the kitchen (and me).  🙂  I'm glad your sauce is homemade instead of opening various bottles and packages full of preservatives, sodium, and who knows what else.  The 2 tablespoons of pepper scared me (I reduced it to 1 tablespoon) but I'm sure it would have been fine using the full 2 tablespoons with that quantity of sauce.  I added chopped green onions, salsa, and cilantro to the sour cream and jalapeno topping.   Thanks for sharing

    Larry, you made a beautiful rendition of an American Classic! Who cannot love Enchilada Casserole? Such a great meal..and yours was superb. Thanks for sharing!  Of course, I would be burying it in fresh chopped Serrano peppers, but that is besides the point…I would clean my plate with your Enchilada Casserole, and then ask for seconds!

    WOW!! looks like I will have to change up my lasagna to this, I make my sauce the same even for normal lasagna, but I don't put a lot chilli in, i'm not interested in spending the week on toilet lol, But Looks great. Cheers

    Be still, my heart! That savoriness takes my breath away, Larry! Enchiladas are my favorite food! I make them all the time, but never have made an enchilada casserole. What I like best about yours is your spice blend and sauce! It just exudes Mexican! And, that is so much better than what you'd get in a can of enchilada sauce. Another big winner!
