Dammit! I'm out of spinach, else this could be breakfast. To add a little sneaky pizzaz… I see crumbling a little Feta right onto the eggs, underneath the spinach mixture. 🙂

like this recipe. I luv adding veg. to scrambled eggs. doing each one different.
My DIL is Chinese and on a visit she cooked eggs and tomatoes which I like but she added sugar to them. Now my husband luved the sugar. Qian says Chinese people luv sugar and my husband being Native says they luv sugar the same.
I was not keen on the sweet eggs but wondered if you have tried sugar instead of salt?

Larry, this looks beyond delicious! I'm thinking that I could make this any time of day, even for dinner. What I really love about it is that it's totally low carb. Thanks for your well executed recipe! — John

That'll learn ya…I usually keep my phone handy while I am driving, and one time traffic was slowing down because a car was flipped on its side in the oncoming lane and smoking like it was gonna blow, so I pulled out my phone to record it. Well wouldn't you know, the phone glitched out. Probably wasn't meant to catch that footage. No one was badly hurt, I saw people walking away from the wreck, so it apparently wasn't that bad.

*lol*, thanks Larry! . . . . actually it's been quite pleasant the past few days up here (low 80's), but I always love the fall 🙂

Take care, my friend . . . and stay cool yourself!

    All best, Jersey Joe 🙂
