What's up Bob I'm going to be doing this this weekend love all of your recipes. I was thinking about using leg quarters and can I substitute coconut water in the container if I can't find green coconuts?
Pro tip, use a spoon to scrape off the skin of the ginger. Saves more of the meat for you to use.

Can't find the recipe, so I'm guessing here:
Marinade:
• 2 tablespoons brown sugar
• 1/2 tablespoon sea salt
• 1 tablespoon smoked paprika
• 1/4 cup onion powder
• 2 green coconut's water
• 1 lime's zest
• 3 chopped chili peppers (half of this)
• 1 tablespoon chopped ginger
Basting sauce:
• 1/4 cup chopped cilantro
• the other half of the chopped chili peppers
• 2 teaspoons sea salt
• 1 teaspoon(?) smoked paprika
• 2 anchovies
• juice of 1 lime
• 1/4 cup coconut oil
Close enough?
This looks delicious. I like to take my drumsticks to about 180 degrees. Dark meat needs more doneness and is still nice and juicy at that temp. The amount of juice that came out of his bite had me wondering if those were truly done.
if i cant get coconuts can i use coconut water?
Try not to use anchovies, that's when things were very wrong.

Okay boys I don't want y'all mad at me but I have been a subscriber for quite a while and me and my family enjoy your recipes other than the last one where you wanted me to go get some Green coconuts for a recipe but that's not what I am writing about me and some good friends of mine who also enjoyed your recipes or wondering y'all call yourself the BBQ Pit Boys but have you ever put a video out were you have actually done a pit BBQ in the ground if you have I would love to see it and once again we all really enjoy your recipes but call yourself BBQ Pit Boys and I don't think I've ever seen you all actually do a Pit BBQ please don't send the boys after me I'm just asking I'm trying to learn how to do it I have access to Fresh pork one of my friends runs a pork processing plant that processes 4 to 6000 Hogs a day and they would gladly give me one if y'all would just tell me how to do it like I said maybe you've already put a video out on it but I sure would love to see how y'all do it hell you call your self BBQ Pit Boys y'all need to live up to your name and once again don't be sending the boys after me we really enjoy your recipes thank you

Are you sure you were supposed to use coconut water and not coconut milk?
The water just washes off your spices.
