I firmly believe that a steak must be kissed by the flame to be perfect. I used to fear the flareups, and kept a spray bottle of water close by to spritz them. One day I had a nice thick ribeye on there and decided to experiment. I let the flames go, got an exquisite crust, and cut the cook time to 3 minutes per side. Best steak I'd ever had, and I do them that way to this day. When I can afford steak… LOL
Damn that looks so good, I wish I could use a regular grill. My apts won't let tenants use charcoal we have to use propane. I like charcoal it makes food taste better.

grilling food over raw charcoal is a no no no no. just my experienced opinion.
i have had many steaks but the best one i've ever had was the outlaw ribeye at longhorns
