Using an aluminium tray is NOT a good idea. Salt reacts with aluminium to form aluminium oxide. Not very toxic but it may alter the taste of the bacon.
I love this channel.
I have followed this recipe to cure and smoke bacon for the first time.
My bacon has a very good flavor but it turned out very tough , very hard.
Any idea why?

i hear you have to use a curing salt i guess pink salt when doing this is that true?
