I've prepared many things like this. If it were me, I'd add a few more spices, such as oregano or garlic powder. Historical note: The stew is named for President Herbert Hoover, who was in the White House when the Great Depression began. Lots of things during that sad period were named after him (no, not the vacuum cleaner).

Great idea. Upgrade it a little with some sliced smoked sausage browned in a skillet. I like the 4 pepper sausages as an easy way to dress up a simple dish.
