    Yeah, I did your bacon wrapped version of this a couple years ago and it was awesome! And I've been doing a version of it ever since. I use 1:1 apple juice and water then add some salt and garlic to brine. I don't like super salty salty brine's and plain water is just boring. But this brine juice works awesome for pork and chicken too! Add some apple wood smoke and you've got yourself a piece of heaven. Thanks for learnin me how to do this chef Tom!
