Chesapeake bay oysters are best eaten raw, FYI. Delicious grilled too,but they significantly reduce in size when grilled. The Pacifics are the way to go.
Im definately cooking the Mexican Chorizo. I may also use Linguiza (Portuguese Chorizo)

this reminds me of a appetizer I did in culinary. confit oyster, crispy chorizo, salsa Verde, and queso fresco and lime. I can't wait to try yours with the smoked chorizo butter. great video man!
