    Just thought I’d throw this out there… but there is an adjustment screw to adjust how close the attachment get to the bowl your mixer might be out of alignment. Thanks for the content

    Merry Christmas Tom, I have a YS640s (upgraded from a traeger timberline 850) which I use to cook porchetta, pork belly ect. and achieved the cracking very easily.. high heat, then reducing to lower heat for the rest of the cook.. im really struggling on the yoder to achieve crackling, and always have to finish it up under the broiler.. ive recently posted on the Yoder FB site.. really would like to hear your thoughts, as I'm sure it can be done.. Cheers, all the best for 2022

    I want to thank you. Yes, the recipe is marvelous. But I am thanking you for illustrating how loosening the mixing bowl while still mixing reduces the amount of "stopping-and-scraping." I remember a video by America's Test Kitchens concluded that their favorite stand mixer was the KitchenAid, because it's tools got closest to the bowl walls reducing the amount of scrapping required. It never occurred to me that you could detach the bowl and manipulate the mixing process (2:28). Now I'm definitely in the market for a stand mixer…and some sour cream coffee cake. Thanks again.

    In the 60s coffee cake, and a lot of other stuff, doughnuts, were made for dunking into the coffee. the cake structure captured a lot of coffee and was a tasty sweet and savery bit.
